Ingredients

  • ½ cup (125 ml) oil 
  • 3 (330 g) onions chopped 
  • 1 whole bulb of garlic minced 
  • 1 large chunk of ginger minced (about 1-2 tbsp minced) 
  • 4 green chillies whole 
  • 1 teaspoon tomato puree/concentrate optional but highly recommended 
  • 2 teaspoon salt or to taste 
  • 2 teaspoon paprika or Kashmir chilli powder 
  • 1.5 teaspoon crushed black pepper 
  • 1 teaspoon coriander powder 
  • 1 teaspoon cumin seeds 
  • 0.5 teaspoon turmeric powder 
  • 3 (350 g) tomatoes chopped 
  • 1.8 lb (800 g) boneless chicken cut into bite-sized pieces preferably thigh 
  • 3 (300 g) capsicums preferably different colours diced into bite-sized pieces 
  • 5 tablespoon (75 ml) white vinegar 
  • Fresh coriander for garnish 

f oil in a pan over medium heat. 

  • Add the chicken pieces and cook until they are browned on all sides and cooked through about 6-8 minutes. Remove and set aside.

Instructions: 

Step 1: Marinate the Chicken 

  1. In a bowl mix together the chicken cubes ginger-garlic paste turmeric red chili powder salt and yogurt. 
  1. Cover and let the chicken marinate for at least 30 minutes (for the best results marinate it for a few hours or overnight in the refrigerator). 

Step 2: Prepare the Jalfrezi Sauce 

  1. Heat some oil in a large pan or wok over medium heat.

  1. Add the marinated chicken and stir-fry until it is fully cooked and slightly golden on the outside (about 6-8 minutes). 
  1. Once the chicken is cooked add it to the prepared Jalfrezi sauce. 
  1. Stir well to coat the chicken in the flavorful sauce. 

Step 4: Add Vegetables and Final Touches 

  1. Add the chopped bell pepper and sliced green chilies to the pan. 
  1. Stir-fry for another 3-4 minutes making sure the vegetables stay slightly crunchy (this is key to an authentic Jalfrezi!). 
  1. Adjust the salt and spices as needed. 
  1. Garnish with fresh coriander leaves before serving.
